I'm looking into putting together a web application that would, amongst other things, function as a wallet. I'd like to know if anyone has had any experience building this type of functionality and how they've structured their servers. Web server + separate box running bitcoind for transaction processing? Want to start buying bitcoin for some small online purchases $20> and maybe start getting transactions but dont want ID or SSN to be used in process

Totalcoin has a sign up with just my phone number and thinking of using this. Not sure if this is the best since i can use paypal to buy. I know cashapp would be the easiest but i need to give my ssn and dont want to be tracked through all of it.
What other method is free to just sign up without verification without an ID or SSN? I also see hardware wallets are better. If thats the case, can i migrate from a software wallet id and put that in a hardware based wallet?
